Sometimes when we know we have a busy week coming up, we buy these frozen P.F. Chang’s meals that take like 10 minutes and taste pretty good. They do the job in a pinch, and whenever we buy them I can think about this tweet:
Our favorite of these frozen meals is the beef and broccoli. It has protein, veggies, and 400000% of your daily sodium. I thought it might be fun to try to recreate it, with maybe a little less sodium. I had a busy Sunday planned, but that is nothing a crock pot can’t fix. This recipe takes a while because you are slow cooking meat, but the actual labor of the recipe is maybe 10-15 minutes.
Cook time:
10 minutes of prep time, 5.5 hours in the crock pot
Ingredients:
2 lbs of sirloin steak/chuck roast
12 oz of frozen broccoli (1 bag)
1 cup of beef broth
1/2 cup of soy sauce
1/4 cup of brown sugar
4 tablespoons of cornstarch
4 tablespoons of water
1 tablespoon of sesame oil
4 garlic cloves, minced
Seasoning: Garlic salt, pepper, ground ginger
Directions:
Slice your beef into thin strips about 1-2 inches long.
Add your broth, soy sauce, brown sugar, sesame oil, and garlic to the crock pot and whisk until combined. Place your beef into the crock pot and mix it in with the sauce until coated.
Set your (covered) crock pot to low heat and cook for 5 hours.
Once your 5 hours is up, whisk your corn starch and water in a small bowl until combined. Pour the mixture into the crock pot and mix well.
Add your frozen broccoli and seasonings to the crock pot. Stir to combine. Re-seal your crock pot and cook for another 30 minutes, this time on standard heat.
Serve over rice or noodles.

It was delicious with rice, but the next night Jake mixed the leftovers with ramen noodles and that was just as delicious. There was also the extra perk of being welcomed home by the smell of it too!”
