This week I finally caved and did a recipe I found on Tiktok. There are a ton of great recipes on there but I try to avoid using it because I know not everyone has that app and the links don’t work very well outside of the app.
This recipe just looked too good and too easy not to try. The guy in the video was using this as a meal prep recipe so I guess you could use it for that if you want to eat leftovers for days on end. People who meal prep are living a life I do not understand.
I made some very minor tweaks mainly because I didn’t wanna buy avocado oil. I know there are some less common ingredients with this one so if you need help finding something or need a good substitute let me know!
Ingredients:
3 Chicken breasts
3 Cups of cooked rice
1 Cup of diced onion
2 Green onions
Marinade:
1 Tablespoon of chili crisp
1 Tablespoon of garlic
2 Tablespoons of soy sauce
1 Tablespoon of olive oil
Seasonings: garlic salt, pepper, gochugaru
Glaze:
2 Tablespoons of soy sauce
1 Tablespoon of garlic
1 Tablespoon of chili crisp
1 Tablespoon of sesame oil
4 Tablespoons of honey
1 Tablespoon of mirin
Seasoning: gochugaru, sesame seeds
Directions:
Cut your chicken breasts into cubes. (The guy in the video tenderizes them but I was too lazy)
In a large bowl, pour your marinade over your chicken and mix well. Marinate your chicken for at least 30 minutes or up to 90 minutes because you were watching basketball and forgot you were cooking.
Cook your chicken over medium heat until brown but be careful not to cook too long since it will be going back in the skillet later.
Remove your chicken from the skillet and set aside. Toss your cup of onions into the pan and cook until they begin to brown.
Once they start to brown, add your cooked rice and chicken. Cook until your chicken is cooked through and your rice browns and takes on that nice fried rice texture. If you want your rice to be a little more crispy like me, you can add a little sesame oil to the pan before you add the rice.
Pour the glaze into the skillet and mix well. Top with sliced green onions and enjoy!

Extremely simple. I might raise this up to a 3 if I didn’t have a rice cooker, but overall it is really simple. The trickiest part of the entire process was finding the Gochugaru.
