Our dishwasher broke this week. We got it fixed, but I had already picked out a recipe with a broken dishwasher in mind so it was too late to change course. This dish is perfect for a weeknight when you don’t really wanna cook or do a lot of dishes but still wanna eat. Most of the ingredients you probably already have at home.
I even got super lazy and decided to try a new way to prep garlic cloves without cutting them and it worked pretty well. Basically instead of cutting the garlic cloves I put them in a mortar and pestle and just mushed them into a paste. Here is the lazy person’s one pot chicken alfredo:
Ingredients:
Olive Oil
Salt, Pepper, Italian seasoning
2 boneless, skinless chicken thighs (the recipe uses breasts but thighs have more flavor)
1.5 cups of whole milk
1.5 cups of chicken broth
4 cloves of garlic mushed into a paste like a maniac
8 oz. Pasta noodles (I used angel hair for chicken alfredo. Sue me.)
.5 cup of heavy cream
1 cup of grated parmesan (I used the cheap stuff)
1 cup of grated gouda (optional but really adds flavor)
Directions:
Heat olive oil in a pot over medium-high heat and season your chicken with salt, pepper, and Italian seasoning. Cook until golden and cooked through, about 8 minutes per side.
Take out and set aside for 10 minutes and then slice.
Add milk, broth, and garlic to skillet. I added the garlic first so it would cook for a minute before I added the milk and broth. Season with salt, pepper, and Italian seasoning and bring to a simmer.
Add pasta noodles and stir for about 3 minutes. Cook noodles until al dente which was only like 3 more minutes for my angel hair pasta but fettucine would be more like 5-8 minutes.
Stir in heavy cream, parmesan, and gouda until combined. Simmer until sauce thickens.
Remove from heat and stir in sliced chicken. Garnish with parsley or basil if you’re feeling fancy.

Grating the gouda and mushing the garlic were easily the most tedious part of this and they were really not that bad. You can also skip the gouda and used minced garlic if you really don’t wanna do any work and it would still be delicious.
