I work in downtown Indy, and as much as I would like to pretend I am always trying new lunch spots, I usually end up at the same place. It’s a little cafe hidden in a bank building on Illinois St called Cosmic Cardinal Cafe. The coffee is great, but the soups and the baked goods are the real reason I keep going back.
She has a lot of great soups, but the white chicken chili is the undisputed star. I considered opening a restaurant across the street so I could try to steal the recipe through various hijinks, but I figured it would be faster to just make my own imitation.
Cook time:
45-60 min
Ingredients:
1 lb of chicken breast
1 onion, diced
2 green peppers, diced
1 jalapeño, diced (remove the seeds if you do not want spice)
4 cloves of garlic, minced
5 cups of chicken broth
4 ounces of cream cheese
1 can of corn, drained
1/2 cup of salsa
1 cup of shredded mozzarella cheese
green onions for garnish
olive oil for greasing pot
Seasonings: garlic salt, pepper, cumin, paprika, chili powder,
Directions:
Cook your onions in olive oil over medium heat for about 5 minutes. Add your garlic, peppers, cumin, paprika, chili powder, garlic salt, and pepper. Cook for another 10 minutes stirring occasionally.
Add your chicken, and your chicken broth to the pot. Cover your pot and bring it to a boil, then turn the heat down to medium-low and simmer for 20 minutes.
By now your chicken should be cooked through. Remove it from the pot, and shred using two forks to pull it apart.
Add your cream cheese, and stir until it dissolves into the broth. Add your chicken, corn, salsa, and mozzarella. Cook for another 5-10 minutes until the cheese is melted.
Top with green onions, or whatever chili topping you prefer.
